GINGER CURRY FISH FILLET









INGREDIENTS :

600g fish fillet, 300g string beans, 1 onion, 1 raw mango, 60g ginger, 30g coriander, 2T oil.


SEASONINGS:
(1) 2T cooking wine.
(2) 1t curry powder, 1t salt, 1t potato starch.
(3) 1/2T caster sugar, 1T lukewarm water, 1t soy sauce.
(4) 2T broth, 1T water, 2t curry powder, 1t chili sauce.

PREPARATION :

1. Scale fish fillet; Remove any fine bones with a pair of tweezers; Rinse fish fillet in running water for a while; Drain; Evenly brush a layer of seasoning (1) on both sides of the fish fillet; Leave it for 10 minutes.
2. Add seasoning (2) to a bowl; Stir till well mixed.
3. Pat-dry the fish fillet with kitchen paper; Rub the seasoning (2) on both sides of the fish filet; Leave it for at least 30 minutes.
4. Peel and rinse ginger; Grate most; Cut the remaining into slices; Squeeze the grated ginger for juice.
5. Rinse string beans and drain; Tear off the hard vein on both sides of string beans from the top to the bottom; Cut into sections.
6. Cut off any roots of coriander; Rinse and drain; Chop.
7.Peel, rinse and cut an onion into strips.
8. Peel and pit mango; Cut the flesh into pieces.
9. Add seasoning (3) and the ginger juice from the step 4 to a bowl; Stir till well mixed.
10. Add seasoning (4) to a bowl; Stir till well mixed.
11. Add 1T oil to a non-stick pan; Swirl the pan around to evenly coat the pan with the oil; Arrange the ginger slices on the pan; Heat over a medium heat till the bubbles form; Arrange the fish fillet with the skin facing the pan in the pan; Pan-fry over a medium heat till all sides of the fish start turning into white; Carefully turn the fish fillet over; Discard the ginger; Carefully drizzle the ginger sauce from the step 9 over the fish fillet; Pan-fry over a medium heat till medium well; Turn to a low heat; Cook over a low heat for 1 minute; Turn off the heat.
12. Add 1T oil to a non-stick skillet; Swirl the skillet around to evenly coat the skillet with the oil; Heat over a high heat; Turn to a low heat; Add the onion; Stir-fry over a low heat till fragrant; Add the string beans and the mango; Turn to a medium heat; Stir-fry over a medium heat for 3 minutes; Add the seasoning (4) and most of the coriander; Bring to the boil over a high heat; Carefully add the fish fillet; Cook over a high heat for 1 minute; Turn off the heat; Arrange on serving plates; Garnish with the remaining coriander.
