INGREDIENTS :

10 scallops, 2 stalk fo lemongrass, 3 cloves of garlic, 2 stalk of coriander, 1 red chili pepper, 1 stalk of basil, 3 shallots, 2 limes, 2 cups of oil, 2T salt.


SEASONINGS:
(1) 1/4 tsp salt, some ground white pepper.
(2) 2.5T fish gravy, 3T gula melaka syrup.

PREPARATION :

1. Soak scallops in water with salt for 6 hours.
2. Peel, rinse and cut garlic into slices.
3. Rinse coriander; Cut off any roots; Cut into sections.
4. Rinse red chili pepper; Discard the stem; Cut into slices.
5. Rinse basil; Discard the stems.
6. Peel and rinse shallots; Cut into slices.
7. Lift the scallops and drain.
8. Rinse lemongrass; Cut off the green parts; Cut the remaining white parts into slices.
9. Grasp a scallop in a clean dishtowel, flat side up. Run the blade along the inner surface of the flat shell to cut through the muscle that holds the shells together with a long flexible knife; Lift off the top shell; Pull out and discard the black intestinal sac and the yellowish frilly membrane; Cut the white scallop and orange coral from the bottom shell and rinse briefly in cold running water; Discard the white ligament attached to the scallop flesh (repeat the step till all scallops are done); Sprinkle with seasoning (1) and leave it for 15 minutes.
10. Rinse limes; Cut into halves; Juice.
11. Add seasoning (2) to a non-stick pan; Stir over a low heat till bubbling; Turn off the heat; Add the lime juice; Stir to mix well to be dressing.
12. Pour 2 cups of oil into a deep skillet; Bring to the boil over a high heat; Add the garlic; Deep-fry over a high heat till crispy; Lift the garlic up and drain; Turn off the heat.
13. Set the oil aside, leaving 1T oil in the skillet; Heat over a high heat; Add the scallops; Pan-fry over a high heat for 1 minute (flip every 30 seconds); Turn off the heat; Set the scallops on clean kitchen paper to drain.
14. Add all ingredients (except the fried garlic) and the dressing from the step 11 to a salad bowl; Toss to mix well; Arrange on serving plates; Sprinkle with the fried garlic.
