INGREDIENTS :

6 unripe mangoes, 4T peanuts, 5 red chili peppers, 1 cucumber ( medium), 1 stalk of spring onion, some lettuce, some dried shrimps, 1 lime, 10g coriander.


SEASONINGS:
3T fish sauce, 2T gula maelaka syrup.

PREPARATION :

1. Rinse dried shrimps; Blanch in boiling water for 1 minute; Lift the dried shrimps up; Drain.
2. Rinse coriander; Chop finely.
3. Rinse spring onion; Chop finely.
4. Cut off any stem of lettuce; Separate leaf by leaf; Rinse; Soak in water for 15 minutes; Lift the lettuce up; Rinse and drain.
5. Rinse red chili peppers; Cut into pieces; Chop most finely.
6. Heat a dry skillet over a high heat; Turn to a low heat; Add the dried shrimps; Stir-fry over a low heat till crispy; Set the dried shrimps aside.
7. Add the peanuts to the skillet; Stir-fry over a low heat till fragrant and crispy; Turn off the heat.
8. Rub-wash cucumber; Drain; Cut off both ends of the cucumber; Cut into strips.
9. Peel mangos; Pit; Cut the flesh into strips.
10. Add the mango flesh, the cucumber, the spring onion, the chopped red chili pepper, the coriander and seasonings to a bowl; Toss to mix well; Add the peanuts and the dried shrimps; Toss briefly.
10. Arrange the lettuce on a serving plate; Arrange the salad mixture on the lettuce; Garnish with the remaining red chili pepper.
